Soup Making...Winter Style
Looking for some inspiration to make soup while it is cold and rainy here in Dallas this week...so hit me with your best shot.
I already have a workable chicken noodle as well as roasted butternut squash.

Lentils man!!!
Chop up all manners of porky treasures (pancetta, chorizo, ham, etc.) as you wish and sauteƩ with a mirepoix. Add as much or as little dry lentils (I rinse them once or twice beforehand for a few minutes) as your heart, or stomach, desires. Add beef or chicken broth to cover everything. Throw in a bay leaf orr two and a couple twists of black pepper. Stir every so often over low heat for approx. 1 hour. I finish with a little shot of tomato vinegar (my secret ingredient). Warms you up all the way down to your frozen toes.
Bon appetit.

I bought some shiitakes and chanterelles yesterday and have some home-made chicken stock. I'm gonna make wild mushroom, chicken and corn chowder.

I would if it were corn season but I just bought some frozen. I think I've seen frozen roasted corn at Trader Joe's, though. Check it out.

This is one of our house favorites. If you do it, don't skip the serrano cream. It totally makes the soup. The soups look so pretty side-by-side in the bowl, too.

I KNEW it was too good to be true.......when I read "serrano cream" I immediately thought jamon serrano, not peppers. Makes more sense with the peppers though.

Just banged out a quick minestrone Bill.
= parts
Carrot
Onion
Celery all diced
sliced garlic
Sweat the whole mess in olive oil
add chicken broth
fresh herbs of your choice
Canned diced tomato
reggiano parm rind wrapped in cheese cloth to make for easy removal
simmer
add pasta when done.
I used acine de pepe (pepper seeds) pasta which is very small and I cooked it in the soup
If you use something bigger, I would cook it separately.

Okay Ricca, but minestrone absolutely screams for pig fat!

Actually, I was really surprised at how much flavor came out of that cheese rind.
I usually avoid swine because one of us won't partake.

Bill if you would learn how to make a good vegitable stock soup, I would have something to eat at your Flannery Fests.

Made a special stop at TJ's today for roasted corn.
