HoHo Pho...
I really love one bowl meals in the winter. Chili, big soups, stews, etc. really are the shit when the weather is cold and you need warming from the inside.
We have a contemporary Vietnamese restaurant in town and one thing they do really well is Beef Pho. That it is so filling and yet not really heavy to me is such a bonus and as I am a big fan of garnishing it hot and heavy with sriracha and lime, it has a cleansing feeling to it as well.
I found one recipe online that seems to fit my understanding of the dish. I will try it this weekend.
Wine pairing: I would probably default to ZH Riesling or Albert Mann Gewurtztraminer.

I love Vietnamese soups. I make a killer, at least to me and Kristi, hot and sour shrimp soup with rice vermicelli.

Let us know how it is once you try it Ricca. I love the Viet soup as well. and I agree with you, it's mega hearty but yet doesn't make you feel like a stuffed pig.

This was an earlier attempt at something pseudo asian using udon noodles (which I love).
